Shanghai bok choy and chicken
A quick tasty dish - make double and take for lunch tomorrow.
250g chicken mince
2 Shanghai bok choy, stems and leaves chopped separately
½ red onion, peeled and sliced
1-2 tsp sesame oil
1 tomato, sliced
¼ yellow capsicum, deseeded and sliced
Heat a heavy-based pan, add chicken mince and brown on all sides.
Add onion and bok choy stems and cook until onion is tender. Add sesame oil.
Add leaves and salt and stir fry until wilted.
Garnish with tomato and capsicum. Serve immediately.
