Spinach with anchovies and pine nuts

The delicious combination of anchovies, sultanas and pine nuts combined with spinach is stunning served over pasta.

Spinach with anchovies and pine nuts

Ingredients

Serves 2

1 Tbsp canola oil
2 anchovy fillets, chopped
2 Tbsp chopped fresh parsley
1 x120g bag baby spinach
3 Tbsp sultanas or currants
4 Tbsp pine nuts
pinch salt
freshly ground black pepper, to taste

Method

Warm oil in a heavy-based frying pan.
Add anchovies and parsley and stir fry for 2-3 minutes over a medium heat.
Add spinach, sultanas and pine nuts.
Stir fry until heated through and well mixed and spinach is glossy.
Serve immediately.
