Sriracha sauce

Add zing to dishes with this awesome hot sauce.

Sriracha sauce

Ingredients

Makes about ¾ cup

1 Tbsp canola oil
4 cloves garlic, peeled and chopped
250g red chillis, stem and seeds removed and chopped
1 Tbsp brown sugar
pinch salt
½ cup water
½ cup white vinegar

Method

Heat the oil in a heavy based pan, add garlic and stir fry for 1- 2 minutes.
Add all other ingredients and stir until the sugar has dissolved.
Bring to the boil and simmer for 10 minutes, cool.
Blend the mixer with a stick blender or in a food processor.
Transfer sauce to a jug or jar and store in the refrigerator.

Variation: For a thicker sauce, cook the mixture longer.
