Stir fried carrot ribbons
Preparing carrots this way makes a delicious and different salad.
2 carrots, peeled, then peeled into ribbons
¼ cup water
¼ cup sweet roast capsicum salsa
1 Tbsp chopped coriander
Heat a heavy-based frying pan, spray with oil and add carrot ribbons.
Stir fry for 1 minute, add water and cook until carrots are just tender. Drain.
Remove from heat, add salsa and stir through.
Serve sprinkled with coriander.
