Stir fried carrots and courgettes
A quick and tasty way to enjoy these vegetables.
1 cup sliced carrots
1 cup sliced courgettes
1 Tbsp chilli sauce, optional
bunch of chives, chopped
Heat a little canola oil in a large non-stick pan or wok until very hot.
Add carrots and stir fry until cooked. Remove from pan and keep hot. Repeat with courgettes.
Add a sprinkling of water when the oil is used if the vegetables are not cooked.
Return carrots to the pan, add sauce if using, and chopped chives. Stir fry until steaming, then serve immediately.
Variation: use soy, hoisin, or orange juice in place of the chilli sauce.
