Kids, young and old, will enjoy these easy to make fritters as a light meal or snack.
3 cups sweet corn kernels (cooked fresh or frozen) 540g
1 red capsicum, deseeded and diced (optional)
4 eggs, beaten
½ cup self-raising flour (or use standard flour with 1 tsp baking powder)
Freshly ground pepper to taste
3 Tbsp canola oil
Mix the corn kernels, capsicum, eggs, flour, salt and pepper in a bowl.
Heat oil in a large frying pan.
Place spoonfuls of the mixture in the pan.
Cook until bubbles appear on the top of the mixture and the bottom side is golden.
Turn and cook the other side until golden brown.
Cook in batches until browned on each side.
Serve with a green salad and tomato salsa.
