Kids, young and old, will enjoy these easy to make fritters as a light meal or snack.
3 cups sweet corn kernels
1 red capsicum, deseeded and diced
½ cup self-raising flour (or use standard flour with 1 tsp baking powder)
1 tsp baking powder
Freshly ground pepper to taste
3 Tbsp canola oil
Mix corn kernels, capsicum, eggs, flour, baking powder, salt and pepper together in a large bowl.
Heat oil in a large frying pan.
Place tablespoons of the mixture in fry pan and cook until bubbles appear, turn over and cook the other side until brown on each side.
Serve with a green salad and tomato salsa.
