Tomato and capsicum sauce
This sauce makes a great stir through sauce for all vegetable combos.
Makes about 1 cup
1 Tbsp canola oil
½ red or brown onion, sliced
4 medium tomatoes, chopped
1 red capsicum, deseeded and chopped
¼ cup tomato sauce
freshly ground white pepper, to taste
Heat oil in a heavy-based saucepan. Add onion and cook until transparent.
Add tomatoes and capsicum, and simmer for 2-3 minutes.
Add tomato sauce, salt and pepper.
Add a little water if sauce is too thick.
Bring to the boil, reduce heat and cook for a further 4-6 minutes or until steaming hot.
