Tomato, basil and crouton tapas
Serve as part of a tapas selection.
500g cherry tomatoes, halved
1 cup wholemeal croutons
¼ cup extra virgin olive oil
2 slices wholemeal bread
canola oil spray
Place tomatoes in a bowl.
Sprinkle with croutons and basil leaves.
Drizzle with olive oil, garnish with basil leaves and serve.
Preheat oven to 150°C.
Remove crusts from bread and slice into 1-2 cm squares.
Place in a baking dish and lightly spray with oil.
Bake for 10 minutes, remove from oven and stir.
Return to oven and bake for 10 minutes or until the croutons are crisp and golden.
Remove from oven and cool before adding to the tomatoes.
