Tomato couscous salad

A great any-season salad that is quick and easy to make.

Tomato couscous salad

Ingredients

Serves 4-6

1 cup couscous
1 cup boiling water
5 tomatoes, chopped
1 cup chopped parsley
¼ cup chopped mint leaves

Dressing:
2 cloves garlic, peeled and crushed
3 Tbsp lemon juice
½ Tbsp sugar
1 Tbsp lite olive oil
freshly ground black pepper, to taste

Instructions

Soak couscous in water for about 5 minutes or until water is completely absorbed.
Place couscous, tomatoes, parsley and mint in a bowl.
Mix garlic, lemon juice, sugar, oil and pepper together in a screw top jar.
Drizzle dressing over the salad and gently toss before serving.
