Tomato, mushroom and bacon kebabs
Try these delicious kebabs on the barbecue.
12 rashers streaky bacon
12 small tomatoes, sliced in half
24 button mushrooms
freshly ground black pepper, to taste
sprigs of coriander
Preheat the oven grill.
Thread the bacon onto the skewers between the mushrooms and tomatoes. [See the photo]. Start with a mushroom, then add a tomato, and finish with a mushroom.
Arrange on an oven tray.
Grill under preheated grill until bacon is crisp, and the mushrooms and tomatoes are cooked.
Turn during grilling if necessary.
Sprinkle with black pepper, garnish with coriander and serve.
Tip: Remember to pre-soak wooden skewers to prevent them from burning or use metal skewers for the cooking process then transfer to bamboo skewers for a classy look!
