A quick and tasty dish or snack, plan ahead and cook extra vegetables to use tomorrow.
2 round wraps
¼ cup pesto
1 cup wilted spinach
½ cup cooked or raw sliced courgettes
½ cup cooked diced pumpkin or orange kumara
¼-½ cup grated cheese
Preheat oven to 200°C.
Place 1 wrap on a baking tray and spread with half the pesto.
Place the second wrap on top and spread with the remaining pesto.
Arrange the spinach, courgettes and pumpkin on top and sprinkle with the cheese.
Place in the preheated oven and bake for 10-15 minutes or until the cheese is melted.
Remove from the oven, slice and serve.
