Veg up mince and kumara
This is a tasty recipe to serve to the family.
400g lean beef mince
1 onion, peeled and diced
1 clove garlic, peeled and crushed (optional)
2 carrots, grated
2 courgettes, grated
2 stalks celery, sliced
1 cup water
2 tsp cornflour mixed with a little water
2 large or 4 small kumara, sliced into chunks, cooked and kept hot
1-2 Tbsp chopped parsley
Heat a heavy-based saucepan. Add the mince in batches and brown on all sides.
Add onion and garlic and stir fry for 2-3 minutes. Return all mince to the saucepan.
Add carrots, courgettes, celery and water. Mix well, cover and cook for 10-15 minutes, adding more water if the mixture becomes dry.
Add the cornflour and water and cook, stirring well until the mixture thickens.
Pour over the hot kumara, sprinkle with parsley and serve.
Variation 1: Oven bake the kumara whole, slice in half and serve with the mince on top.
Variation 2: Replace the kumara with baking potatoes.
