Chicken salad with harissa dressing

Serves 4-6

4 medium chicken breasts, freshly cooked and sliced
4 cups salad leaves
20 black olives, pitted and halved
1 red onion, halved and cut into thin wedges lengthwise
8-12 slow roasted tomatoes [see our recipe]
salt and freshly ground black pepper to taste

Dressing:
90 ml lite olive oil
1 Tbsp harissa paste
1 Tbsp cider or white vinegar

Place chicken, salad leaves, olives and onions into a bowl.
Mix dressing ingredients together and toss over salad.
Divide onto plates, add tomatoes and serve.
