Gazpacho

This delicious cold soup can be served in glasses with a celery or cucumber swizzle stick.

Serves 4

1 red capsicum, deseeded and roughly chopped
6 large ripe tomatoes, peeled
1 small cucumber, peeled
1 small mild onion, peeled and roughly chopped
1 clove garlic, peeled and finely chopped
1 cup tomato juice
2 Tbsp olive oil
2 tsp sugar
salt and freshly ground black pepper to taste

Blend all ingredients together in a food processor fitted with a metal blade until smooth.
Refrigerate.
Serve cold.
