Kumara and red onion gratin

An easy and tasty low fuss dish.

Serves 4

4 medium kumara
1 red onion, sliced finely
½ cup grated mozzarella

Cut kumara in half and boil for 20-30 minutes or until just tender.
Meanwhile preheat oven to 180°C.
Drain kumara, cool, slice and then place in a greased baking dish.
Sprinkle with onion and cheese.
Place in preheated oven for 5-10 minutes until the cheese is melted and golden.
Serve immediately.
