Potato pile up
This potato dish can be cooked in the microwave for a quick and easy meal.
Serves 4
4 medium all-purpose potatoes
½ cup lite sour cream
1 tomato, sliced
6 slices salami or 2 slices ham
½ cup grated tasty cheese
1 cup roughly chopped mushrooms
1 Tbsp finely chopped chives
6-8 olives, sliced (optional)
Preheat grill.
Wash and scrub potatoes.
Cut in half and boil 25-30 minutes or until softened.
Slice potatoes and place in a flat ovenproof or quiche dish.
Pour over sour cream and top with remaining ingredients.
Grill under preheated grill for 4-5 minutes or until cheese melts and begins to turn golden brown.
Microwave:
Pierce potatoes and bake on 100% power for 10-12 minutes or until softened.
Stand 4 minutes.
Assemble potato pile up as instructed.
Cook on 100% power for 3 minutes.
