Warm broad beans, ham and lettuce salad
This warm salad is so easy to make.
2 Tbsp olive oil
1 clove garlic, peeled and finely chopped
1 onion, peeled and finely chopped
1 cup diced ham
¼ cup vegetable stock
½ iceberg lettuce, roughly chopped
1 cup shelled, blanched broad beans
Heat oil in a heavy-based frying pan, add garlic and onion and cook until soft.
Add ham and vegetable stock.
Add lettuce and broad beans to the frying pan, stir and heat through. Serve immediately.
To blanch broad beans: Place in rapidly boiling water for 2-3 minutes. Remove and cool in iced water or under cold running water. Drain well.
