Yams and tomatoes
Serve a colourful and tasty collection of salads for family and friends.
500g yams, topped and tailed
2 cups skinned, diced tomatoes
freshly ground black pepper, to taste
Place yams in a microwave dish. Cover and cook on high power for 4-6 minutes or until yams are tender. Alternatively, steam or boil yams until tender.
Place tomatoes in a heavy-based saucepan and simmer over a low heat until the consistency of a thick sauce.
Add pepper and yams. Heat to steaming hot and serve.
