A trio of vegetables and herbs
The power of parsley – adding flavour and colour to popular salad vegetables.
1 yellow capsicum, deseeded and chopped
½ telegraph cucumber, chopped
2 red tomatoes, halved and chopped
2 Tbsp chopped parsley
Mix capsicum, cucumber and tomatoes together in a bowl.
Sprinkle with parsley and serve.
This salad is the top left bowl. The salad on the right is Tomatoes, cucumber and basil.
