Anise baked rhubarb

Impress your guests with this star dessert.

Anise baked rhubarb


Serves 4

4 stalks rhubarb, leafy ends and stem end removed, sliced into 10 cm lengths
1-2 Tbsp vanilla syrup
4-6 star anise
4 x 60g scoops lite ice cream
8-12 toasted brioche slices, or plain biscuits
4- 8 mint sprigs for garnish
rhubarb ribbons for garnish


Preheat oven to 180°C.
Place rhubarb, vanilla syrup and star anise in a baking dish.
Add just enough water to cover the rhubarb.
Cover dish with aluminium foil and bake for 20-30 minutes or until the rhubarb is tender.
Serve with a scoop of lite ice cream and toasted brioche, garnished with mint sprigs and rhubarb ribbons.

Variation: Use maple syrup in place of the vanilla syrup.

Dried rhubarb ribbons:
Preheat oven to 180°C.
Peel fresh rhubarb into ribbons.
Place on baking sheets and dry in preheated oven until crisp. Store in an airtight container.
