Try this coleslaw with a difference - it is delicious.
4 cups finely sliced small bok choy
2 carrots, julienned or coarsely grated
1 spring onion, finely sliced
2 Tbsp sultanas or cranberries
1 Tbsp pumpkin seeds
2 Tbsp Asian-style dressing
Mix bok choy, carrots, spring onion, sultanas and pumpkin seeds together in a serving dish.
Pour over the dressing and serve.
