Baked frittata

Kumara, silverbeet and onions feature in this easy to make frittata recipe


Baked frittata


serves 4

1 onion, peeled and diced
1 tbsp oil
4 eggs
1 cup milk
2 kumara, grated
3 silverbeet leaves, finely sliced
pepper to taste




1. Preheat and oven to 180°C
2. Brown the onion in the oil and set aside
3. Beat the eggs and milk in a large bowl
4. Add the grated kumara
5. Add the finely chopped silverbeet and cooked onions, mix well
6. Place in an oven dish and bake for 3/4 - 1 hour until the mixture is set and golden brown
