Kūmara, silverbeet and onions feature in this easy to make frittata recipe.

Ingredients

Serves 4

1 Tbsp canola oil
1 onion, peeled and diced
4 eggs
1 cup milk
2 kūmara, peeled and grated (4 cups)
2-3 silverbeet leaves, finely sliced
freshly ground pepper, to taste

Method

Preheat oven to 180°C.
Heat oil in a frying pan, add onions, cook until soft and then set aside.
Beat the eggs and milk in a large bowl.
Add kūmara, silverbeet, and onions. Season with pepper and mix.
Place in an ovenproof dish and bake in preheated oven for 45-60 minutes, or until the mixture is set and golden brown.
Remove from oven and serve.

Tip: Serve with a green salad.
