Baked kūmara snake

Who says you shouldn't play with your food? Great for sharing, especially with children. Watch the video to see how to make it.


Baked kūmara snake


Serves 10

10 small gold, red or orange kūmara, washed and cut into large chunks
125g lite cream cheese
¼ cup chopped parsley
½ carrot
1 sultana
parsley sprigs for the head
1-2 cups shredded lettuce


Preheat oven to 180°C.
Prick kūmara with a fork, place on baking trays and cook for about 20 minutes or until soft. Remove from oven and slice a small cross in the top of each piece. 
Mix cream cheese and chopped parsley together. Place a small spoonful on top of each kūmara piece.
Place lettuce on a board, use the carrot as a head, with half a sultana for each eye, and then arrange kūmara in a snake shape.
