Baked vegetables with cumin

This dish is so easy to prepare and is a great dish to feed a crowd.

Baked vegetables with cumin


Serves 8-10

2 carrots, peeled and sliced into chunks
3 onions, peeled and sliced into wedges
2 parsnips, peeled and sliced into chunks
3 baking potatoes, washed and sliced into chunks
1 kūmara, washed and sliced into chunks
½ cup canola oil
½ cup lemon juice
3 Tbsp brown sugar
freshly ground black pepper, to taste
1 tsp ground cumin
fresh coriander or parsley for garnish


Preheat oven to 180°C.
Place prepared vegetables in a baking dish.
Mix oil, lemon juice, sugar, pepper and cumin together.
Pour over vegetables and mix evenly to coat the vegetables.
Bake in preheated oven for 25-35 minutes or until vegetables are tender and the top is golden brown.
Garnish and serve.
