Bean and Daikon radish salad


Serves 6

1 large Daikon radish, peeled and diced
200g green beans, sliced and blanched
¼ cup maple syrup (gluten free)
2 red chillis, deseeded and finely diced
1 Tbsp chopped mint, optional


Place the Daikon radish and beans in a bowl.
Mix maple syrup, chillis and mint together.
Pour over the radish and beans, toss and chill before serving.

To blanch beans: Place in rapidly boiling water for 1-2 minutes until just tender.
Remove and cool in iced water or under cold running water. Drain well.
