Beef and broccoli stir fry
This tasty stir fry can be ready to eat in 15-30 minutes and is packed with vegetables.

500g lean beef, thinly sliced
1 Tbsp grated ginger
3 cloves garlic, crushed
2 Tbsp soy sauce
½ tsp cider or white vinegar
1 tsp canola oil
1 onion, peeled and sliced
2 carrots, finely sliced
1 head broccoli, sliced into florets
½ Tbsp cornflour
½ cup water
4 cups cooked brown rice
1 chilli, sliced and deseeded (optional)
Mix the beef with ginger, garlic, soy sauce and vinegar.
Heat the oil in a wok or large frying pan and stir fry the onions until soft.
Add beef and continue to cook until brown.
Add carrots and broccoli and cook until tender.
Mix cornflour and water together and slowly add to the frying pan, stirring constantly until the sauce thickens.
Serve with rice and chilli.
