Ingredients

Serves 4 as a side dish

2 beetroot, cooked and sliced into cubes
3 Tbsp balsamic vinegar
3-4 rocket leaves

Method

Place beetroot in a serving dish.
Pour balsamic vinegar over and garnish with rocket leaves.
