Bean sprout and cabbage fritter

There are lots of ways to enjoy these fritters - try them with dipping sauce, or in a wholemeal roll for lunch.

Bean sprout and cabbage fritter

Ingredients

Makes 1 large fritter

2 eggs
2 Tbsp flour
1 cup bean sprouts
1 cup finely shredded cabbage
¼ cup finely diced cooked meat (optional)
pinch salt
1 Tbsp canola oil

Method

Mix together the eggs, flour, bean sprouts, cabbage and meat.
Season and mix.
Heat the oil in a large frying pan.
Pour the mixture into the middle of the pan.
Cook slowly on each side until cooked through and golden brown.
