Bean sprout and cabbage fritter

There's lots of ways to enjoy these fritters - try them with dipping sauce, or in a wholemeal roll for lunch.

Bean sprout and cabbage fritter

Makes 1 large fritter

2 eggs
2 Tbsp flour
1 cup bean sprouts
1 cup finely shredded cabbage
¼ cup finely diced cooked meat (optional)
1 Tbsp canola oil

Mix together the eggs, flour, bean sprouts, cabbage and meat
Heat oil in a large frying pan
Tip mixture into middle of pan and cook slowly on each side until cooked through and golden brown

Serve ideas:
Wholemeal Bread roll
Gherkins / pickled vegetables / kimchi
Vegetables sticks (carrot & capsicum)
Microgreens
Soy or fish sauce dipping sauce
Relish / ketchup
