1 Tbsp canola oil
500g stewing beef or mutton chops, fat trimmed and sliced into 5 cm chunks
2 onions, peeled and chopped
3 carrots, chopped
1 kūmara, peeled and chopped
2 potatoes, peeled and chopped
1 Tbsp vinegar
4 cups watercress/puha
Heat oil in a large heavy-based saucepan.
Add meat and brown on all sides.
Add onions and carrots and continue to cook.
Add kūmara, potatoes and vinegar and continue to cook.
Cover with cold water and bring to the boil.
Skim fat off the surface occasionally.
Reduce heat and simmer for 1-2 hours or until meat is tender and vegetables are cooked.
Add watercress/puha just before the end of cooking.
Serve in bowls.
