Broccoli and coconut soup
Try this tasty combination of flavours.
½ Tbsp canola oil
2 onions, chopped
1 Tbsp curry powder
1 tsp chilli powder
1 tsp ground ginger
1 cup lite coconut milk
1 head broccoli, roughly chopped
2 carrots, peeled and chopped
freshly ground black pepper, to taste
Heat the oil in a large heavy-based saucepan.
Add onions, curry powder, chilli and ginger. Stir fry for 2 minutes.
Add coconut milk, broccoli, carrots and water to cover.
Bring to the boil, reduce heat and simmer for about half an hour.
Process with a hand blender or use a food processor.
Return to heat, add salt and pepper.
Garnish with chives and serve.
