Broccoli, mushrooms and ginger
This tastes as good as it looks!
250g button mushrooms, washed
2 Tbsp finely chopped crystallised ginger
½ cup canola oil
1-2 cloves garlic, peeled and crushed
1 head broccoli, sliced into florets
Place mushrooms, ginger, oil and garlic in a bowl.
Mix, cover and stand for 2-3 hours.
Blanch broccoli by placing in rapidly boiling water for 1-2 minutes, remove and cool in iced water or under cold running water. Drain well.
Add to mushrooms, toss gently, place in serving dish and serve.
