Bulgur wheat and kūmara loaf

These delicious loaves are ideal for lunch boxes. Add a tasty salad and some pickle or relish.

Bulgur wheat and kūmara loaf

Ingredients

Makes 1 large loaf or 4 mini loaves

1 cup bulgur wheat
1 cup boiling water
1½ cups grated kūmara
1½ cups grated carrot
2/3 cup grated cheese
4 eggs, beaten
250g cottage cheese

Method

Place wheat in a bowl and pour boiling water over. Cover and leave for 30 minutes.
Preheat oven to 180°C.
Spray or wipe 1 large or 4 mini loaf tins with a little oil.
When wheat has absorbed all the water, add kūmara, carrot, cheese, eggs and cottage cheese and mix well.
Spoon mixture into loaf tins.
Bake in preheated oven for 20-30 minutes, or until loaves are cooked and golden on top.
Remove from oven.
Serve with a salad and relish.
