Cabbage and bacon bake
Looking for an easy dinner to cook in advance? Try this tasty dish.
1 cabbage, quartered, core removed
4 cooking apples, cored and sliced into wedges
3 onions, peeled and sliced
1-2 silverbeet leaves, washed and sliced
1 tsp freshly ground black pepper
400g chopped lean bacon, or 1 ham hock
1 cup white vinegar
2-3 Tbsp chopped parsley
Preheat oven to 150°C.
Slice cabbage, and add apples, onions, silverbeet and pepper. Place in a large baking dish.
Arrange bacon or ham on top. Pour over vinegar.
Cover and bake in preheated oven for 2½ hours. Add extra water during cooking if mixture dries out.
Transfer to serving dish and serve garnished with parsley.
Tip: Serve with baked kūmaras for a complete meal.
Variation: Add 2 green capsicums, deseeded and sliced, with the ham.
