Carrot and celery salad
So simple and easy to make - ring the changes with different nuts.
2-3 medium carrots, sliced
2 stalks celery, finely sliced (retain leaves for garnish)
2-4 Tbsp of one or more of the following: walnuts, coconut, raisins, toasted sesame, sunflower, pumpkin seeds
2 Tbsp lite olive oil or canola oil
2 Tbsp lemon juice
1 tsp sugar
freshly ground black pepper, to taste
Place carrots, celery and selected seeds, nuts or raisins in a bowl.
Blend oil, lemon juice, sugar and pepper together.
Pour over salad, toss gently.
Garnish with celery leaves.
Variation: Try grating the carrots or slice the celery and carrots into sticks or chunks.
