Carrot and spring onion bread baskets
A cross between a toasted sandwich and a quiche! Watch the video how to make them.
12 slices wholemeal sandwich bread, crusts removed
1 carrot, grated
1-2 Tbsp sultanas
1 spring onion, finely sliced
1 Tbsp chopped fresh parsley
½ cup milk
1 Tbsp Edam cheese, grated
Preheat oven to 180°C fan bake or 200°C conventional.
Spray a 12 pan muffin tray.
Press bread slices into muffin pans.
Divide carrot and sultanas between bread cases. Scatter over spring onion and parsley.
Beat eggs and milk together. Divide egg mixture between bread cases. Sprinkle with cheese.
Bake in preheated oven for 10-15 minutes, or until egg is set and bread cases are golden. Serve warm or cold.
