Carrot cake

Try this delicious carrot cake - it is sure to become a favourite.

Carrot cake


Makes 1 cake

2 eggs
¼ cup brown sugar
150 ml olive oil
2 Tbsp milk
1 cup grated carrot
1 cup self raising flour
1 tsp cinnamon


Preheat oven to 180°C.
Line a 20 cm ring cake tin with baking paper and lightly spray with oil.
Beat eggs and sugar together until creamy. Stir in the olive oil, milk and carrot.
Sift the flour and cinnamon together and add to egg and oil mixture. Stir to combine. Pour into the cake tin.
Bake in preheated oven for 30-40 minutes or until a skewer inserted into the middle comes out clean.
Cool in the tin, then turn out onto a cake rack. Top with a cream cheese icing and cut into 12 pieces.
