Carrot, parsnip and potato mash
Comfort food at its best - mashed vegetables are so delicious.
3 carrots, peeled and sliced into even-sized pieces
3 parsnips, peeled and sliced into even-sized pieces
2 large mashing potatoes, peeled and sliced into even-sized pieces
¼ cup milk
2 Tbsp margarine or canola oil
freshly ground black pepper, to taste
chopped fresh parsley
Boil, steam or microwave vegetables until tender.
Add milk and margarine.
Roughly mash, leaving small chunks of different vegetables within the mix.
Add salt and pepper, garnish with parsley and serve.
