Carrots with lemon and coriander

This slightly sweet lemon sauce goes so well with carrots.

Carrots with lemon and coriander


Serves 4

3 medium carrots, peeled and sliced at an angle to make ovals
1-2 tsp brown sugar
1 Tbsp margarine or canola oil
1 tsp grated lemon rind (zest)
2 Tbsp lemon juice
freshly ground black pepper, to taste
2 Tbsp finely chopped coriander or Italian parsley


Place carrots, sugar, margarine, lemon rind, lemon juice and pepper in a microwave dish.
Mix, cover and cook on high power for 4-6 minutes or until tender.
Stir once during cooking. Remove from microwave.
Mix coriander or parsley through the vegetables carrots. Serve.

This sauce can be used on other vegetables such as parsnips, swedes, kūmara, turnips, pumpkin or yams.
