Celeriac in garlic coconut milk

Celeriac is often used diced in soups, braises and stew or sliced and added to stir fries. Try this recipe with chunks of celeriac cooked in coconut milk.

Celeriac in garlic coconut milk


Serves 4

1 large celeriac, peeled and sliced into chunks
4 cloves garlic, peeled and halved
1 cup lite coconut milk
3 fresh mint sprigs, for garnish


Preheat oven to 180°C.
Place celeriac and garlic in a baking dish and cover with coconut milk.
Place in preheated oven and bake for 20 -30 minute or until celeriac is tender.
Garnish with mint and serve.

Variation: Stir through one grated carrot and one cup of bean sprouts and 1 Tbsp chopped mint before serving.
