Celeriac wedges on spinach
Try celeriac roasted as wedges; it's also great mashed with olive oil.
1 peeled head of celeriac, sliced into wedges
2 cups spinach leaves
2 Tbsp tomato salsa, or chopped tomatoes
2 Tbsp sour cream
Preheat oven to 180°C.
Place celeriac wedges in a baking dish and spray with olive oil.
Bake in preheated oven for 20-30 minutes or until wedges are soft when pierced with a knife.
Serve on the spinach, topped with tomato salsa and sour cream.
