Char grilled vegetable slices
Char grilled vegetables are so easy to do and oh, so delicious!
canola oil spray
2 courgettes, thinly sliced lengthwise
1 orange kūmara, thinly sliced lengthwise
1 eggplant, thinly sliced
½ cup chopped parsley
Heat a char grill, or heavy-based frying pan and lightly spray with oil.
Place vegetables on char grill and cook, without turning, until golden brown.
Spray top of vegetable slices, turn over and cook until golden brown.
Sprinkle with parsley and transfer to a serving dish.
Note: Cooking times depend on the thickness of the vegetable slices.
