Chargrilled cauliflower with capsicum
For extra flavour add lime juice to the oil and garlic mixture.
½ head cauliflower, sliced into 1cm wedges
2 cloves garlic, crushed
2 Tbsp sesame oil
white pepper to taste
1 cup baby spinach leaves
½ red capsicum, diced
2 Tbsp toasted sesame seeds
Preheat oven to 180°C.
Place cauliflower in an oven-proof dish.
Mix oil and garlic together and brush over the cauliflower.
Place in oven and cook until charred on both sides. Turn if necessary.
Serve in a bowl with spinach, sprinkled with capsicum and sesame seeds.
