Cheesey topped fennel

Fennel has an aniseed flavour and aroma and is popular in stir fries or roasted. Try this tasty dish.

Serves 4

2 -3 fennel bulbs, finely sliced
1 tsp lemon juice
1 Tbsp flour
¼ cup wholegrain breadcrumbs
¼ cup grated cheese


Preheat oven to 180°C.
Bring a large saucepan of water to the boil, add lemon juice and fennel.
Boil for 2-3 minutes, then drain.
Place fennel in a large bowl, sprinkle with flour and toss to coat
Spoon into a baking dish
Mix the breadcrumbs and cheese together and sprinkle over the fennel.
Bake in preheated oven for about 15 minutes until the cheese has melted and the topping is golden brown.
