Chicken and onions with fresh turmeric
Fresh turmeric gives a great flavour. Try this delicious Chicken and onions with turmeric.
1-2 Tbsp canola oil
1 onion, peeled and thinly sliced
1-2 Tbsp finely chopped fresh turmeric stem (peeled)
4 skinless chicken thighs
1 cup low salt chicken stock
½ cup coconut milk
½ cup chopped fresh coriander or Italian parsley, for garnish
Add half the oil to a large heavy-based frying pan over medium heat.
Add onion and cook, stirring occasionally, for 3-5 minutes or until soft.
Add turmeric and cook for a further 1 minute.
Add chicken thighs and brown on both side, over a medium heat.
Cook for a further 2 minutes.
Add stock and coconut milk.
Reduce heat to medium-low, cover and simmer gently for about 20 minutes, or until the chicken is tender and cooked through and the juices are clear when a knife is inserted.
Serve over rice, garnished with coriander.
