Chilli mince and beans

Wow, this is so tasty; if you like the heat add more chilli. Make double and store half in the freezer.

Ingredients

Serves 4

1 Tbsp canola oil
1 onion, diced
1 carrot, grated
2 cloves garlic, crushed
250g beef mince
6 tomatoes, chopped and ½ cup water, or 1½ x 400g cans chopped tomatoes
2 cups New Zealand frozen or canned corn kernels
1 Tbsp white vinegar
1 tsp ground cumin
1-2 tsp paprika
½ tsp chilli
1 x 410g can black beans, drained and rinsed
2-3 Tbsp chopped parsley, for garnish

Method

Heat oil in a large heavy based saucepan.
Add onion, carrot and garlic and stir fry over a low heat until soft.
Increase heat and add mince. Stir and cook until mince is brown on all sides.
Add tomatoes, corn, vinegar, cumin, paprika and chilli. Mix well and add beans.
Simmer over a low heat until sauce has thickened.
Serve, garnished with parsley.
