Chive and egg toasted sub
A substantial variation of the popular chive and egg sandwiches.
2 eggs, boiled, peeled and chopped
2 Tbsp chopped chives
1-2 Tbsp margarine
freshly ground black pepper, to taste
4 pieces French stick, toasted
2-3 chives, for garnish
Place eggs, chopped chives, margarine, salt and pepper in a bowl. Mix to combine.
Spread on the toasted French stick and serve garnished with chives.
