Coleslaw with chicken drumsticks and wedges
This meal is sure to be a family favourite!
8 chicken drumsticks, skin removed
3 Tbsp tomato sauce
1½ Tbsp vinegar
1 Tbsp canola oil
freshly ground pepper, to taste
½ cup water
4 roasting potatoes, washed and sliced into wedges
2 Tbsp canola oil
¼ small cabbage, shredded
2 carrots, grated
½ apple, grated
2 Tbsp vinegar
3 Tbsp canola oil
Heat oven to 200°C.
Mix drumsticks with tomato sauce, vinegar, oil, salt and pepper in a bowl.
Place in a baking dish and pour water into the dish.
Bake in preheated oven for approximately 30 minutes or until chicken is thoroughly cooked through.
Place potatoes on a baking tray and drizzle with second measure of oil and toss to coat.
Bake for approximately 30 minutes or until crispy and golden brown.
Mix cabbage, carrot, apple, vinegar and third measure of oil together in a bowl. Serve.
