Contemporary tomatoes on toast
Juicy tomatoes on ciabatta brings café food into the home.
4 tomatoes, sliced, quartered or left whole
1 onion, peeled and sliced
¼ cup lite olive oil
4 or 8 slices ciabatta, toasted
½-1 cup rocket leaves
Preheat oven to 180°C.
Place tomatoes and onions in a baking dish and drizzle with olive oil.
Place in preheated oven and cook for 25-30 minutes.
Serve on the ciabatta and garnish with rocket leaves.
