What better way to serve courgettes. The fritters taste delicious served with tomato salsa.
½ cup self raising flour
freshly ground black pepper, to taste
2 cups grated courgettes, drained
1 Tbsp grated lemon rind
1 Tbsp finely chopped mint
¼-½ cup milk
canola oil spray for frying
tomato salsa [see our recipe]
Beat the eggs in a large bowl.
Lightly fold in the flour, salt and pepper, courgettes, lemon rind and mint.
Add sufficient milk to make a soft batter.
Heat a large heavy-based frying pan. Spray lightly with oil.
Drop heaped teaspoons of courgette mixture into the pan and fry until bubbles form on the surface of the fritters, or about 2 minutes.
Turn over and cook the other side until golden brown.
Place on a paper towel and keep warm until the whole batch has been made.
Serve with a green salad and tomato salsa.
