Serve with a salad for a great lunch; especially good to take on picnics.

Serves 6

canola oil spray
4 courgettes, ends removed
3 rashers bacon, rind removed, finely chopped
1 cup grated cheese
1 cup self raising flour
½ cup canola oil
4 eggs, beaten
pinch salt
freshly ground black pepper, to taste


Preheat oven to 180°C.
Spray a baking dish, approximately 14 cm x 27 cm, with oil.
Grate courgettes into a bowl.
Add bacon, cheese, flour, oil, eggs, salt and pepper and combine.
Pour into prepared baking dish and bake in preheated oven for 30-40 minutes, or until golden-brown and set.
Remove from oven, rest for 5 minutes, serve hot or chilled.
